August President’s Message

Greetings Tampa Bay Culinary Association Members,

In writing this month’s chapter newsletter, much has gone on with the chapter since my last newsletter. We are near the end of summer, I hope that you all have had an enjoyable time over the summer to rest and be with family & friends.

To begin I would like to bring you up to par, recently the chapter held our 4th golf outing at Innisbrook Resort, hosted by Executive Chef Andy Coniglio, CSC. Many thanks to Chef and his staff; I would be remised if we did not reach out to also thank the Innisbrook Resort Golf Staff and Resort Catering Staff. As a result, our chapter fundraiser raised a little over $11,000.00, which the chapter made a donation to the Ryan Wells Foundation for $2500.00.

I also would like to send a message to our student members I encourage you to become more involved with the chapter. The funds we raise are to help support our student members for assistance with scholarships and competition fees. All we ask in return is to be involved with the chapter to volunteer in activities, meetings, and fundraisers. All students interested should inquire about the chapter sponsorship program, please contact Apprenticeship Chair Chef Michael Priola, CEC, ACE, AAC.

July we held our chapter elections for your new Executive Board. I would like to thank all chapter members who voted and participated in the election. In addition, I cannot thank enough the out going Executive Board for their assistance and volunteering for the past two years. Without your help and guidance the chapter would not have made the progress, which we achieved. The incoming President will be selecting and appointing Board members in the next few weeks. We will be introducing the past & new elected Board at the chapter awards dinner on September 15, 2014 at the Tradewinds Resort, hosted by Jeffery Fredrickson, Director of F&B. Please attend we look forward to seeing all of you. There will be a contribution $20.00 per person, seniors and one Guest, and Student members will be gratis which has always been our tradition. Please make sure you RSVP to Cheryl Glass our Chapter Administrator,

Our SE VP Michael Deihl, CEC, CCA, AAC will be present. Chef Deihl has supported our chapter and we look forward to his visit. Please take the time to meet Chef Deihl during his visit.

Your Chapter Board is in the final stages in completing the Chapter Bylaws. The August Board meeting will be focused in completing and requesting a vote from the chapter Board of Directors on August 11th 2014, at Metropolitan Ministries. The board meeting will begin at 5:00 PM. Once we have an agreement then we will proceed at the general meeting to our chapter then we will request from the chapter members to move forward with the revision of the chapter Bylaws. We must have a quorum to pass to formally present to the ACF National for approval.

Finally, I attended the 2014 ACF National Convention in Kanas City, representing our chapter in several meetings, which included the Board of Governors meeting on Saturday July, 26, 2014. There were several issues on the table, after all discussions the Bylaws were past to move forward for revision. I was fortunate to be able to par take in a visit to Vita Craft Cookware Manufacturing tour. I can tell you I was very impressed with the tour and the quality of the cookware. I don’t remember the last time I saw cookware made by hand in the US! As a parting gift, we were given a 8” all clad commercial sauté pan. WOW, this was cool!

I attended the Kanas City BBQ Competition that was held on Thursday & Friday, man we are talkin the real deal! There were many competitors and we had the opportunity to sample the delicious Kansas City style BBQ at it’s best! But then I had heard about some of the local BBQ hangouts, one we visited was Oklahoma Joe’s. Without a doubt some of the best BBQ I have ever feasted on, so good on our way back home we had another opportunity to enjoy lunch.

The convention had many highlights that made this conference very interesting and most of all fun. ACF National President Tom Macrina spoke to the members thanking them for their loyalty to the ACF. Vinny Verelli was the keynote speaker along with Chef Homaro Cantu, chef/owner at the Chicago restaurant Moto. Both speakers were very motivating and inspiring with their presentations. There was a special tribute to Chef Charlie Trotter who pasted away last November. There was a “Cooking Today Live” panel, which hosted Alumni from Charlie Trotters restaurant.

All the competitions were tough and I enjoyed watching all the chefs perform for several ACF National Medals. Our Chapter member Chef Les Eckert competed in the ACF National Pastry Chef of the Year. Chef Eckert represented the Chapter with great honor and pride. I am very grateful to have Chef Eckert as a member of the Tampa Bay Chapter. As I close this letter, I hope to see everyone at our next chapter meeting, August 11, 2014 at Metropolitan Ministries. The General Meeting will begin at 6:30 PM. Please do not forget about the chapter awards dinner, Hosted by Jeff Fredrickson at The Tradewinds Resort, September 15, 2014.
