2015 August President’s Message

Greeting Chapter Members and Friends,

I had the opportunity to represent our chapter at the 2015 Cook. Craft. Create. ACF National Convention in Orlando Florida from July 30 to August 3, 2015. I would like to share some of the activities that I experienced at the convention.   Also future ACF regional and National Dates for 2016; ACF Regional NE / SE Conference Atlanta, ACF National Convention, Phoenix Arizona.

First I would like to congratulate the following ACF Tampa Bay Culinary Association Chefs for their distinguished awards and induction into the ACF AAC as Fellows:

I was honored to be able to participate and watch all the ceremonies that took place.  Just last year I also had the honor to be inducted into the AAC Honor Society.  It gave me chills and I was deeply moved with emotional feelings for all recipients.  All my Best to you!

There were many workshops available for chefs from hands-on workshops featuring Contemporary Middle Eastern Mezze, Charcuterie, Wild Yeast, Modern Breads, and Fruit Carving Sculptures.  Also there were classes about “ Mignardise” beyond the Macaron, Cider House Rules, Cooking Alternatives, Bees Sourcing, and Creative Pastry Ideas, Baba revisited, Smoking Gun, Intro to Sous- Vide Cooking, and many more.  The ACF Trade Show was two days.  Featuring many innovative concepts from vendors, specialty equipment companies, food, spices, oils, as well as ACF national culinary competitions.  The general sessions, one in particular featured 15-year-old Jack Witherspoon.  I was so moved with Jack’s presentation; at 2 years old, Jack was diagnosed with Leukemia.  Now, Jack is recovering patient from Leukemia.  Jack has under gone cancer treatment for 3 ½ years.  All seemed to be going well, but when Jack turned 6 years old, the Leukemia had come back.  Jack had to receive a bone marrow transplant.  Today Jack is an inspiring young boy who has said cooking has saved his life.  This is truly a sensational story and we wish Chef Jack all the Best of Luck.

From the educational side of things, we enjoyed the Knowledge Bowl, Pro Start 101, and Culinary Careers in research & development, When You Can No Longer Be a Chef, and Maximizing Supplier Relationships.

Friday, I attended the Board of Governors meeting, which began at 1:00 PM and ended by 6:30 PM.

In the general meeting the voting process was discussed mentioning the following: Majority Vote is ½ of 2/3’s the vote. Moving Previous Question, Special Rules of Order.  Standing Rules.

Bylaws changes voted 96% approved.
Consistency in Bylaws 98% approved.
Approved Bylaws Changes 96% approved.

The induction of our newly elected executive board and the outgoing executive board was very exciting; it was heart felt with speeches given by each official. Their leadership over the past several years of service has driven the successful stability of the ACF commitment to the members. We wish our friend Michael Deihl, re-elected Southeast VP the very best of luck in his role representing our region.   Of course our outgoing ACF AAC Chairman Stafford DeCambra had a very emotional speech and heartfelt, best of luck Chef Stafford.  Congratulations to in coming ACF AAC Chairman Chef Mark Wright, CEC, AAC and Rico DiFronzo, CEC, CCA, AAC, we wish you all the best.

Of course I cannot leave out the wonderful job from the professional and the student competitors were, it was nice to see the devotion and hard work from all these young chefs.
