President’s Message & Report on the ACF National Convention in Phoenix AZ


GreetinM Rigberggs Chapter Members and Friends,

I had the opportunity to represent our chapter at the 2016 Cook. Craft. Create ACF National Convention in Phoenix Arizona from July 15 to July 19, 2016. I would like to share some of the activities that I experienced at the convention.   Also, there are up coming future ACF Regional and National Convention dates for; ACF Regional NE / SE Conference New York, at the Hilton Midtown February 26 – 28, 2017.  ACF National Convention, will be hosted in Orlando Florida Date to be announced..  We had several of our chapter members present at the convention in Phoenix, Rene Marquis, John Beaudrie, Tod Hess, Allan Gazaway, Michael Thrash, Joshua Dixon, if I missed anyone else, I apologize for my oversight.

Please congratulate ACF Tampa Bay Culinary Association Executive Board Member John A. Beaudrie for his distinguished award and induction into the ACF HAAC.

I was honored to be able to participate and watch all the ceremonies that took place on Sunday morning. Please take the opportunity to congratulate John, for being inducted into HAAC.

There were many workshops available for chefs from hands-on workshops featuring, The Art of Making Sushi, Sugar Basics, Classical Southwest Cuisine, Fruit Carving, Chocolate from the Ground Up to mention a few.  Also there were classes about Wine & Cheese Paring, Innovative Ways to put Pulse to Work in your Kitchen, Vertical Gardening, The Secret History of Ceviche, Modern Foie Gras Curing Techniques, The Inns & Outs of Pastry Competition, and Creative Pastry Ideas, Mousseline Cream Brioches, Coconut Crisp & Tropical Domes, Cultivating the Art of the Kitchen & Health, and many more.  The ACF Trade Show was two days.  Featuring many innovative concepts from vendors, specialty equipment companies, food, spices, oils, as well as ACF national culinary competitions.

From the educational side of things, we enjoyed the Knowledge Bowl, How colors effect our Food Choices, Benefits of ACFEF Accreditation & Apprenticeship, ACF Judging Competitions Seminar, Umami: The Intersection of Taste & Biology, The Profitable Menu Item, How Diversity in the Workplace can Lead to Success, Your Culinary Business Blueprint ACF Women’s Task Force Round Table.

Friday, I attended the AAC Board business meeting, which discussed future changes toward your qualifications & electives for induction into the AAC.   AAC Directors Reports were distributed to all attended. 2015 minutes were passed.

Saturday, I attended the Board of Governors meeting, which began at 1:00 PM and ended by 6:30 PM.

In the general meeting the voting process was discussed mentioning the following: Majority Vote is ½ of 2/3’s the vote. Moving Previous Question, Special Rules of Order.  Standing Rules.

Bylaws changes for Qualifications to run for ACF National President are being tabled for future discussion.

New ACF National Board Elections for Executive Office Nominations were taken.

Membership retention is currently at a 93% rate.

Membership renewal is currently at 83% rate.

Paid off the line of credit. Leaving a zero balance.

ACF Membership dues to increase by 3%.

NRA Partnership w/ ACF National.

The general sessions;

Day 1 featured Graham Elliot & Water Staib, along with CMC Steve Jilleba. Also included meet & Greets for both sessions..

Day 2 featured Mark Eggerding, Terry French and Tim Jackson.

Of course I cannot leave out the wonderful job from the professional and the student competitors were, it was nice to see the devotion and hard work from all these young chefs.

The Marriott Phoenix Desert Ridge Resort & Spa did a wonderful job for our convention. The Professional Staff was exceptional.  The Conversion Staff turned rooms over in 15 minutes in order to meet our requirements.  Kudos to the executive chef and his very talented professional culinary staff.
