Job Description

2+ years of Sushi Experience is Required

5+ years of Sushi Experience is Preferred

Basic Cooking Skills are Required (i.e. sauting, grilling, frying)

Knowledge of Protein Cooking Temperature is Required (i.e. Rare, Medium Rare, Medium, etc…)

Line Cook Experience is Preferred

Must have extensive knowledge of both Japanese and Classic Culinary Terminology

Must have a proven track record of timeliness and efficiency

Must have proper kitchen equipment and tools (i.e. chef knives, yanagi, usuba, etc…)

State or National Approved Food Handler Certificate is Preferred

Must have proficiency of proper knife handling skills and protein fabrication including but not limited to: proper breakdown of whole chicken in a timely fashion, fabrication of whole fish such as salmon, grouper, tuna and more with minimal or little waste, and other proteins utilized in the restaurant

Proficient knowledge of both Japanese and Classical Sauce making is Preferred (i.e. kabayaki, béchamel, ponzu, or béarnaise)

High School Diploma or Equivalent is Required

Culinary Degree is Preferred

Basic Knowledge of Asian Ingredients is Required (i.e. miso, fish sauce, hoisin, wasabi)

Basic Knowledge of Alcoholic Beverages is Highly Preferred (craft vs domestic beers, ale vs lager, old world vs new world wines)

Basic Knowledge of Sake is Required

1+ years of Front of House Operations is Required

Knowledge of Protein Cooking Temperature is Required (i.e. Rare, Medium Rare, Medium, etc…)

Knowledge of both Japanese and Classic Culinary Terminology is Preferred

Must have a proven track record of timeliness and efficiency
